Mom has gone up north for three weeks to visit family so I am taking care of things here at the inn by myself. I surely miss her when she is not here. We are still waiting for spring to truly arrive. Two ducks were swimming in the back pond this week but a blue heron also discovered the pond and our Koi so we had to put nets over them to keep the gigantic bird out!
It’s raining and cold this morning so I thought I would roast some veggies in the oven, smells heavenly!, and make a roasted veggie frittata for breakfast. We have a full house this weekend. For the first course I served fresh watermelon & honeydew with lime, fresh mint and basil. With the frittata a freshly baked cinnamon streusal muffin and apple maple chicken sausage was served. The guests seemed to enjoy it.
