Ok, so summer FINALLY arrived! YAY!

Actually, I think we skipped right over spring completely.  Can you believe it is the last week of June already?  Well, it has been pleasantly cooler this past week, only in the 70’s and we have enjoyed it.  Rodney has done lot’s of yard work, trimming, mulching, mowing etc. and mom has weeded her little heart out!  From spring until fall our gigantic back yard and ponds keep us busy with never ending work but the yard is truly spectacular!

deck greenhouseAnd I must say that I am so happy to have an abundance of fresh herbs growing in the herb boxes on the deck!  This year we purchased a little green house and set it up to protect the herbs, and our granddaughters tomato plant, and the mint is going absolutely crazy!  I have fresh mintcut it back three times already and it is growing faster than I can use it.  I have been making all kinds of spa waters with it-

  • watermelon & mint
  • cucumber & mint
  • cucumber, lemon and mint
  • lemon & mint
  • mint, mint, mint
  • You get the idea 🙂

Spa water is so easy and so refreshing.  I love to have a pitcher of it in the fridge all summer and of course we put it out in the afternoons for our guests to enjoy during their stay with us.  Perhaps in a future post I will share with you how I make it but today I want to share with you another summertime favorite, our watermelon, mint & lime recipe which we serve as a first course for breakfast during these steamy summer mornings.  Like the spa water it is extremely refreshing when served chilled first thing in the morning. Looking at the weather forecast for Auburn over the next few days I think it would be an excellent choice on our menu!  June 30th – July 2nd it’s supposed to be in the 90s!  Try to stay cool people!  Maybe this will help 🙂

Watermelon, Mint & Lime

Deliciously refreshing and surprisingly easy to make with only a few simple ingredients. Make and chill about 1/2 before serving to meld the flavors.

Ingredients

  • 4 Cups seedless watermelon cut into bite sized pieces
  • 4 tbsp fresh mint leaves chopped
  • 2 tbsp fresh lime juice can use bottled in a pinch
  • 1 pinch sea salt
  • freshly ground pepper

Instructions

  1. Mix all ingredients gently in a medium size bowl until well incorporated. Divide into 4 small serving dishes and garnish with a sprig of fresh mint if desired.  Refrigerate until ready to serve.

Recipe Notes

NOTE: You can omit the salt & pepper but I don't recommend it as it really adds a lot to the overall flavor in this dish.
