Deliciously refreshing and surprisingly easy to make with only a few simple ingredients. Make and chill about 1/2 before serving to meld the flavors.
Mix all ingredients gently in a medium size bowl until well incorporated. Divide into 4 small serving dishes and garnish with a sprig of fresh mint if desired. Refrigerate until ready to serve.
NOTE: You can omit the salt & pepper but I don't recommend it as it really adds a lot to the overall flavor in this dish.
